This is an awesome idea! I doubled the recipe, and it worked great. Thank you for a new comfort food go-to. Made this Thursday night, it was sooo deliciously good!!! Thank you! Always looking for Quinoa recipes!! Great side dish — very good and very easy to make — cooked while the meat was being prepared. I will add additional spinach when I make it again. Can easily be converted to gluten-free by using gf all purpose flour of your choice and crumble your own gf bread instead of using panko. This is delicious, though I altered it a bit: I can see making this recipe a lot using lots of different cooked grains and veggies.
